imgp3164Last night I got together with my friend Jessica for dinner and to watch one of our favorite shows, Dancing With the Stars! We had decided a few days ago to make this pizza and we were so excited. When I got over to her house, Jessica had all of the ingredients for the pizza organized and set up on little plates just like Martha Stewart! I was so impressed, especially since she is super busy running around after her adorable little boy all day. Since she had everything ready to go, we put together the pizza really quickly. It was soooo delicious and I think it is our new favorite pizza recipe ! I’m sure that we will make this very often this summer… ūüôā


This unconventional pizza features cool  toppings and a fresh burst of lemon over  a hot crust, chicken and cheese. 


  • ¬†1 ¬†¬†tsp (5 mL) vegetable oil¬†
  • ¬†1 ¬†¬†pkg (13.8 oz/283 g) refrigerated pizza crust¬†
  • ¬†2 ¬†¬†cups (500 mL) diced or shredded ¬†cooked chicken¬†
  • ¬†2 ¬†¬†cups (500 mL) shredded cheddar ¬†and Monterey Jack or marble cheese blend ¬†(8 oz/250 g)¬†
  • ¬†2¬† plum tomatoes¬†
  • ¬†¬ľ¬† medium red onion¬†
  • ¬†1¬† medium avocado¬†
  • ¬†1 ¬†¬†lemon¬†
  • ¬†6 ¬†¬†slices bacon, thinly sliced,¬†cooked and drained (optional)¬†


  1. Preheat oven to 425¬įF (220¬įC). Lightly brush Large Bar Pan with oil. Unroll dough onto bottom of pan, gently stretching and pressing dough to cover bottom. Top crust with chicken and sprinkle with cheese. ¬†
  2. Bake 16-18 minutes or until crust is golden brown; remove from oven. 
  3. Meanwhile, slice tomatoes in half lengthwise using Utility Knife; scrape out seeds and dice. Slice onion.  
  4. Cut avocado in half, avoiding pit; twist halves apart and remove pit. Dice avocado and place into ¬†Classic Batter Bowl. Add tomatoes and onion. Juice lemon to measure 2 tbsp (30 mL) juice; add ¬†to batter bowl and stir gently using Small Mix ‚ÄėN Scraper¬ģ.¬†
  5. Distribute tomato mixture evenly over pizza. prinkle with bacon, if desired. Cut pizza into squares with Pizza Cutter.

imgp3016Now that I am a Pampered Chef consultant, I have access to so many of their yummy recipes! Sooo exciting! This is the pizza that is made as a demo at many Pampered Chef parties and it is so absolutely delicious I think everyone will love it. My boyfriend is not a huge veggie lover, so to get him to eat it tonight I added pepperoni which tasted great! This pizza is fabulous idea to make for a party because it can be served as a main dish (6-8 servings) or as an appetizer (12 servings!) We made it for dinner tonight and I served it with a fresh green salad. Stay tuned for more yummy Pampered Chef recipes to come as I try them out! ūüôā


  • 1 package (13.8 oz) refrigerated pizza dough – I used Pillsbury (they have a thin or thick crust you can choose from)
  • 1 tbsp vegetable oil
  • 2 cloves garlic, pressed or minced
  • 1 cup grated cheddar
  • 1 cup grated mozzarella
  • 1/4 cup grated Parmesan
  • 1 tsp Italian seasoning
  • 1 small onion, sliced into rings
  • 2 plum tomatoes, sliced
  • 1 medium zucchini, sliced
  • 1 cup sliced mushrooms


  1. Preheat oven to 400 degrees. Unroll dough onto the bottom of a lightly greased cookie sheet or Pampered Chef’s large Cooking Stone (great for pizzas!) ¬†In a small bowl, place pressed (using PC’s garlic press!) or minced garlic and oil. Mix together using a basting brush (try Pampered Chef’s Chef’s Silicone Basting brush). Brush oil and garlic mixture evenly over the pizza dough. Bake for 7 minutes. Remove from oven and place on a cooling rack (recommended- PC’s Stackable Cooling Rack).
  2. Meanwhile, grate cheddar and mozzarella (use PC’s¬†Ultimate Mandolin if you have it!) Place cheese in a bowl and add in Parmesan. Add Italian seasonings and mix together well. Slice onions, tomatoes, zucchini, and mushrooms and set in a bowl.
  3. Sprinkle half of the cheese over the crust. Top with onion, zucchini, tomatoes, and mushrooms. Sprinkle with remaining cheese. Bake for 15-18 minutes, or until crust is golden brown. Remove from oven to cooling rack. Cut into squares using a pizza cutter. Serve using mini-spatula.
